Just to revive an old thread; if you simmer milled maize and ground hemp seeds until soft then add and stir in maize flour or fine maize groundbait to soak up the water the resultant mix if left in a warm place and stirred daily will ferment within a few days. You can tell when it smells slightly sweet like vinegar. Portion that batch up into small bags and put them in the freezer. When you want to make more fermented bait take one of the bags out, defrost it and mix it into the new batch of groundbait then leave 24 hours in a warm place. The bacteria in the defrosted bait will kick start the fermentation process and quickly populate the new mixture. Similarly you can add a small amount of your fermented batch into a tin of sweetcorn to speed up the fermentation process.

It is like having a vinegar mother.
